Andy’s Fridge Clean-Out Soup

Grab a chicken or turkey carcass, pop it into a pot and cover with water. Throw in any sketchy veggies you have in the fridge and season with bay leaves and maybe a sprig of thyme or rosemary. Bring water to a simmer and let bubble away for 3-5 hours.. longer the better. Next up strain out the bones and veggies, pick out the bigger chunks of chicken and return the broth to a simmer (light boil). Now toss in diced potatoes, carrots, onions, whatever you have.. no wrong answers here. Simmer until veggies are soft then season with salt and pepper. Eat some immediately and freeze the rest in mason jars.
